CAULIFLOWER, ONIONS, CUCUMBER AND FRENCH BEANS

Prepare all the vegetables and soak in a standard brine for twenty-four hours. Use about equal quantities of each and as far as possible get them into equal size pieces—this will be governed by the size of your onions. Drain well and pack into the jars adding a thin slice of lemon, a chillie or pickled carrot. Cover with mixed spice vinegar, seal down and store for at least a month before using.

CUCUMBER AND ONIONS

2 lbs. of cucumber.

1 lb. of onions.

11/2 pints of spiced vinegar.
